Spring has sprung, and summer is around the corner.
The Spring Ginger and Honey drink is the perfect concoction to enjoy in the beautiful shine as a mocktail or cocktail.
Despite this drink being simplistic, we love the well-balanced mixture of the sweet honey, the intensity from the ginger and bitterness of the apple cider vinegar.
INGREDIENTS
3 Tablespoons honey of choice
1/2 Cup unfiltered apple cider vinegar
1/2 Cup raw ginger slices heated in 1 cup water
3 Tablespoons fresh lemon juice
2 Sprigs fresh rosemary plus more for garnish
Carbonated water for serving
Optional: Vodka, honeycomb
INSTRUCTIONS
Slice raw ginger and add it into a small pan on low heat with 1 cup water. Heat for 1 minute.
While the mixture heats, add honey and vinegar to a large glass jar with a lid.
Pour the warm ginger and water into the glass jar and stir to dissolve honey. Add lemon juice and fresh rosemary. Stir again, place the lid on top of the jar and refrigerate overnight or for several hours.
To serve, strain the mixture over crushed ice, finish with soda water (and possibly vodka…). Garnish with rosemary and honeycomb if desired.
Note: Play with the ratio of your mixture to soda water based on your personal taste preferences.
